Mango and Apricot Purée










Apricots contain beta carotene, believed to help reduce the risk of cancer. Most dried apricots are treated with sulphur dioxide, a preservative that can cause extreme allergic reactions, so make sure that you choose untreated apricots, which tend to be darker in colour.

Makes 2-3 servings
Can be stored for 1 day in the fridge or up to 3 months in the freezer
Nutrition: vitamin C, iron, fibre, beta carotene

Ingredients
1 mango   
2 apricots (or 1 dried apricot), peeled, stoned, and chopped  


Directions
Peel the mango and cut the flesh into cubes.
Whiz the mango and apricots with a hand-held blender or in a food processor or blender to a smooth purée.
