Finger Food - Sweet potato hash browns
A tasty recipe using sweet potato. Ideal as a finger food for your toddler.
olive oil - a little
onion diced very finely
Half of a
clove garlic, crushed
sweet potato (medium)
a little pinch of freshly ground black pepper (optional)
Peel the potato, then shred it with a coarse grater.
Heat the oil, then sauté the onion for a couple of minutes until it begins to soften.
Add the rest of the ingredients, then press the mixture into little "patties".
Cook for 5 minutes on one side, then turn carefully and cook for 5 to 10 minutes on the other.
